For the production of our dmBio almond flour, blanched almonds are gently partially de-oiled by pressing and then finely ground. Since almond flour is naturally slightly sweet, the amount of sugar required by the recipe can be reduced as needed. When baking, about 25% of the grain flour specified in the recipe can be replaced with almond flour.
